So, I have recently started eating a little fish again now after being on a plant based diet for a few months. In an ideal world I would stay on a plant based diet forever, but I have found sometimes it can be a bit difficult when eating out. It's also an easy way of getting protein in after a long day at work. Fish is always a quick dinner and also can taste really great without too much effort. Below is my 'go-to' recipe when I need a quick meal at home that is cooked in less than 10 minutes. You can use whichever fish you like really, but for me it always has to be salmon :)
Recipe:
Preheat your grill to high
In a small bowl, mix the juice of half a lemon, a couple of teaspoons of harissa powder, a teaspoon of garlic oil and a 'squidge' - Technical term! of honey or syrup
Mix together and spread over the fish, put it under the oven for around 3-4 minutes (depending on how you like your fish cooked)
Then in a fry pan, fry some fine beans/asparagus/sugar snap peas or whatever greens you like in some garlic oil and add a little salt
After a couple of minutes add a splash of water - be careful as it will spit!!
keep frying and then put on a plate at the bottom of the grill to keep warm
Turn the salmon half way through cooking and drizzle with a little syrup on the skin side, then cook for a further 3-4 minutes
Serve with your greens and any other veg you fancy!
