Hello!
Welcome back to this weeks blog! :)
I'm going to be straight from the get-go. I've been lazy this week. Not 100% sure why but I've not been 'on-it' as much as usual. Do you ever feel like that? Where procrastination takes over and all your plans for the bank holiday go by the wayside. Ah well, I'm not complaining, it's quite nice now and again to take a bit of a chill pill. I've enjoyed it, just not been so productive ha ha! Don't worry, I will be working super hard this week to compensate... that is my promise to myself!
I've had a really fun week though, I did the most random thing on Friday... do I admit to this...?? ha ha! I was in the audience for The Jeremy Kyle show! ha ha haaaa!! When you open your big mouth and say "ah, you gotta love a bit of Jeremy Kyle" and then your client gets you tickets! Oh god, it was so much fun though, we had a great girly day out in town and had such a laugh. Thanks Alison for organising the randomness - I had a ball!
Anyhoo, before all of that, there was a lot of eating involved! Here are some of my foodie adventures this week...
Cote | Hale Village - See the breakfast menu here
(top) - Smoked Salmon and Scrambled Eggs - smoked Scottish salmon with scrambled eggs, chives and toast
(bottom) - Eggs Royale - two poached eggs on a toasted muffin with smoked salmon and homemade Hollandaise sauce
I have not been here in ages! To be honest the last time I came was to try their breakfasts (I don't really fancy anything on their a la carte menu as the veggie options don't really appeal to me much). It was okay I guess. The staff are really friendly and helpful, it's just there is no atmosphere during the day. I appreciate it's breakfast at the beginning of the week, but if you go to Victors or The Garden at that time (even if it's quiet) there is still more going on. It's just kind of silent... I don't know. Maybe I will give it another shot. What are your thoughts??
Brown rice, lentils, fried onion and spinach with a lemon and garlic dressing
Made a quick, tasty lunch the other day. Fancied something to fill me up but couldn't decide what to make. I ended up creating this tasty little number! Brown rice with lentils, fried onion and spinach. It was a hearty bowl of goodness which tasted really good. I love a good store cupboard meal!
Breakfast bruschetta - Tomato and Basil Toasts with Balsamic Glaze
I love it when I have leftover tomatoes in the fridge. This is such a quick breakfast but tastes like you've made a real effort! A nice change to avo toast too!
Green Pasta - Brown Rice Pasta with Spinach and Peas with a Homemade Tomato Sauce
I seem to have a thing about green veggies with pasta. I think maybe it's because I always have peas in the freezer (couldn't sleep properly without a fully stocked freezer!) and some kind of greens in the fridge. Pasta and peas works so well and I made this pasta sauce up quickly too. Just simply tomatoes, garlic and onion with some fresh basil, dried herbs and vegetable stock. It takes around 10-15 mins but tastes really fresh and so different to a bought sauce.
Acai Bowl with Homemade Granola and Superfoods
Acai bowls make me happy - full stop! It's still super warm and sunny at the moment, but the mornings are getting a little bit grey. I can see these acai bowls transitioning to lots and lots more porridge bowls very soon!
Breakfast Avocado Toast with Chipotle Chilli Sauce
Yum!
Here comes the porridge. I sit and dream about this big bowl of porridge in my savasana! Sorry Sarah and Jane, I am listening to your relaxing words really, but food always takes over my mind! I've started soaking my oats in some warm water for an hour or so before I cook them (no major effort involved really, I just soak them as soon as I wake up and then go and get ready). It makes such a difference to the texture, they are so much fluffier too.
Common Ground | Altrincham
Buttermilk pancakes with ricotta, caramelised walnuts and baked peaches
I have actually been dreaming about these since the last time I had them. I went to Common Ground on Saturday and faced a 20 minute wait - which turned into a 45 minute wait for these! What can I say... I was hungry and grumpy by the time they arrived but my oh my were they worth it! These are the BEST pancakes I have ever eaten... period! If you're a fan of pancakes, you must give these bad boys a try!
Homemade Almond Milk Porridge with Almond Butter, Maple Syrup and Berry Compote
Sunday Funday! This was my super breakfast on Sunday before work. A mega bowl of porridge to see me through the morning... it certainly did too!
Hawksmoor | Deansgate, Manchester - View the menu here
Aged Rib Eye Steak, Triple Cooked Chips, Spinach with Lemon and Garlic and Cauliflower Cheese Sunday Roast
Had a super delicious meal on Sunday night at Hawksmoor. Hubs was in the mood for a steak and so there is really no better place to go! I think this could also be one of my all time favourite Sunday roasts too! It was super filling plus had lots of extra tasty bits like the roasted onion and garlic. Plus those carrots were TO DIE FOR!
Strawberry and Lime Meringue Bomb
Finally, today we went for a lovely family meal to Glamorous in Manchester. We ordered so much food and I was so hungry it came and went! Sorry about the lack of pics! This has got to be one of my favourite places to eat Chinese food. plus, you can't beat their Dim Sum for lunch!
I hope you all had a lovely bank holiday weekend
Thanks so much for reading,
Big love,
