As we are focusing on loving ourselves this month (and of course loving others!), I thought a recipe for some comforting soup is always the best place to start.
Now, this is not a recipe as such, but it is a basic outline for you to make your own speedy meal and then even freeze the leftovers - so you can be nourished again and again. This is the super-quick and lazy version, please feel free to peel and chop your veggies yourself though
WHAT YOU NEED:
1-2 litres of vegetable stock
1 bag of cubed soup mix (butternut squash and onion/mixed veg etc)
1 bag of spring greens
1 bag vegetable soup mix
1 tsp mixed herbs
1 tbsp honey/maple syrup
1/4 tsp ground ginger
1/2 tsp turmeric
1/2 tsp dried chillies (or to your taste)
teriyaki sauce (to your taste, I like around 1 tbsp)
sweet chilli sauce (again to your taste, I like around 1 tbsp)
1-2 tbsp Oyster sauce (or leave it out if you want a plant based version)
miso paste (optional)
METHOD:
Bring the stock up to a boil in a large pan
Add in all your herbs and sauces
Bring back to the boil and add your vegetables from the packet and one or two handfuls of the spring greens
Boil again for 10-15 minutes and then turn the heat down low and cook for around 1-2 hours (or more if you wish)
Finally, stir in a tablespoon of miso paste if you're using it.
Portion out into a big bowl and eat with a spoon and some crusty bread.
FREEZE NOTE: Allow to cool first and then portion it into freezable bags/boxes. Thaw thoroughly before reheating, always ensure food is piping hot.
