I'm sure you know how much of a fan I am of avo toast, but sometimes I can get a bit bored. In fact, in some places I've been to, it can actually taste of nothing!
This on the other hand is different.... This is packed full of flavour and is the perfect breakfast to get you going through the day.
I wanted to do this recipe to show that you can be a little bit lazy now and again. Maybe start to use the freezer section in the supermarket as something that can really help you out (albeit at the moment it's the ideal place to pick up some listeria if you're in the market for that! *rolls eyes*).
In this recipe, I have used the frozen Tesco Indian Inspired Base Mix. It is a combination of chopped garlic, chilli, ginger and onions, but if you don't want to buy frozen veggies, either chop it up yourself before cooking or make a big batch in the food processor and freeze it to use when you need it. In fact, I do this all the time with spring onions as they have generally wilted by the time I get home! I however was feeling a bit on the lazy side and this worked perfectly!
WHAT YOU NEED (Serves 2)
2 x pieces of your favourite bread - I like granary or sourdough
4 x soft boiled eggs, peeled and sliced
1 x avocado
2 x handfuls of Indian Inspired Base Mix (or a combination of your own chopped garlic, chilli, ginger and onion)
1 tsp garlic oil for frying
chipotle mayo to drizzle
salt & pepper
METHOD:
Begin by frying your onion mix until brown and crispy with some salt and pepper
Pop your toast in the toaster just before you're ready to serve
Simple start to assemble your sliced boiled eggs, sliced avocado (half on each) and onion mix onto the toast. Drizzle with your chipotle mayo and a good grinding of black pepper (plus some chilli flakes if the mood takes you)
