So, I've started running! I know... Gasp! Let's see how long it lasts hey!
When I come back from my run, I like to have some kind of protein to help build and repair my muscles from all that hard running (or should I say, 'light jogging').
I love a pancake, as I'm sure you know and these are perfect. They are quick to make, taste amazing and are packed full of great nutrition.
INGREDIENTS:
1 overripe banana (I store these in the freezer so they are always on hand)
2 x organic free range eggs
1 x scoop of vegan, vanilla protein (I love this Sun Warrior Organic one)
1/4 cup organic whole, rolled oats
1 tbsp chia seeds
1/2 tbsp ashwagandha powder (optional)
1 tbsp melted coconut oil
METHOD:
Combine all the above ingredients in a high speed blender. You want it to be quite a thick, pourable consistency. If it's too thick you can add a splash of water. Too thin though and they will just break.
Fry in small batches in a non-stick pan until golden on each side.
TIP: Don't turn them until they have cooked on the bottom first, otherwise they can break. I'm addicted to my new teppanyaki grill for cooking these (plus an array of other things!). It is AH-MAZING!!
Serve with some berries, almond butter, raw maple syrup and a sprinkle of cacao nibs and scoff in your sweats.
